Ingredients
  

  • Small handful fresh mint
  • 1⁄4 cup simple sugar syrup
  • 1 cup fresh ruby red grapefruit juice
  • 1 cup French rosé wine aperitif
  • 1 (750ml) bottle Cava (well chilled)
  • 1⁄2 pink grapefruit (peeled, chopped into chunks)
  • Ice

Instructions
 

  • Add the mint leaves and sugar syrup the bottom of a pitcher and muddle with a wooden spoon.
  • Toss in the chunks of pink grapefruit.
  • Pour in the juice, wine aperitif and top with Cava. Stir gently and chill overnight.
  • When ready to serve, add some ice to the pitcher and enjoy!
